Pastry chef Nicholas Lodge is one of the most respected Master Cake Artists in the world. He has been working in the field of sugar art for over 35 years, and has taken students across the world and written books and DVDs on the subject. Nicholas started his training not knowing that it would lead him to work with celebrities and royalty, all around the world.
Nicholas started decorating cakes at a very young age, when he made a cake for his parents anniversary when he was just 10 years old. After finishing high school, Nicholas worked in a bakery to gain more experience and get faster at commercial speeds. He then went to The National Bakery School of England, located in London, where he spent two years learning cake decorating and designing. Nicholas was honored with the award for Best Cake Decorating Student at his graduation after getting high marks in all his assignments and tests. He then went on to become the Principal Wedding Cake Designer at Woodnutts, England’s leading sugar art school. At Woodnutts, Nicholas created cakes for upscale hotels in London, including The Ritz, Claridges, and The Savoy.
Nicholas became the tutorial manager at Mary Fords School in Bournemouth at the age of 21. While working at Woodnutts for two years, he was part of a team of decorators who were hired to do work for England’s royal family and other celebrities. His first job after Woodnutts was at Mary Fords School in Bournemouth, where he was the tutorial manager. One of his most notable jobs was baking one of the wedding cakes for Prince Charles and Lady Diana in 1981. Nicholas was asked to make cakes for several important royal events, including the Prince and Princess of Wales tour of Tokyo, Japan, and the Queen Mothers 80th birthday. He also reproduced the royal wedding cake for that couple when they got married.
Nicholas name gained recognition, and he started getting invited to write books in 1985. He has since written more than a dozen books, along with producing many instructional DVDs. Nicholas has worked with other sugar artists co-authoring books, and has also been an expert consultant for book publishers of works by other sugar artists.
Nicholas moved to Georgia, USA, after he moved from the United Kingdom in 1991. He soon became an American citizen after being naturalized.
